Quick black bean and rice bowl dinner

Well this was a full day (but most of them are), and I really didn't even get to think about dinner until after 7:00, and I really didn't feel like doing much prep or cooking.  So this is one of my super easy out of the freezer & pantry weeknight meals.  This is just a layered rice bowl - something frozen, something canned, and a few fresh things out of the fridge.

On the bottom - brown rice.  I love that I can buy really good pre-cooked organic brown rice frozen in individual serving packages.  But I also have frozen my own rice before - leftover rice in a quart size bag, and then it just reheats in the microwave in about 3 minutes.

On top of that - black beans, and some cooked chicken - I had some diced, grilled chicken in the freezer, but I think this would be just as good without the chicken and some more beans.  The rice, beans and chicken were individually heated.  Then I topped with shredded cheese and popped that back in the microwave for another minute to melt the cheese.  Then I topped with shredded spinach, cabbage and lettuce, and some diced tomato. Then some sour cream (or plain yogurt) and salsa.  Done.  Easy.  Fresh and really good.
