Gluten free chocolate cake

My mother visited us for her birthday last month.  She has recently gone gluten free, but my kids were insistent that it is not a birthday without a cake!  I was short on time (seems to be the story of my life lately) - but I thought I could still manage to come up with something.  There are some boxed gluten free cake mixes available, but the only one I could find was a yellow cake.  And I don't know about you, but to me birthday cake should be chocolate.  So I poked around online (I love the internet!) and found that it is easy to make a chocolate cake from a yellow cake mix.  I used two boxes of Betty Crocker Gluten Free Yellow Cake Mix - I added about a cup of cocoa powder and maybe about a quarter cup of extra sugar.  I also replaced the water called for in the mix with coffee.  I always do this with chocolate cake - it's a simple way to make a boxed cake taste really good. I used a decaf Starbucks Via instant coffee - I knew my kids were going to be the primary audience for this cake, and they didn't need the extra caffeine.  And I folded in some chocolate chips.

It was yummy!  The flavor was just right, perfect chocolate cake flavor.  I thought the texture was a little dry, but otherwise you really would never have known it was gluten free.  I think maybe next time I would add a little sour cream or something to moisten it up, but the chocolate chips also helped.  And I am so happy to know that it is so easy to make a delicious gluten free cake.
