Another one of my super simple shortcuts. I thought we ought to get into to the spirit and do a little something fun and yummy for Valentine's day. But again, short on time and energy (notice a theme?), I didn't want to take the time to do this one from scratch. The kids don't care - they are just as happy to stir a store-bought cookie mix as a made from scratch one. So...Improvising. I had a package of sugar cookie mix that we never got to at Christmas. I put aside the snowman and star cookie cutters it came with, and dug out some old heart ones instead. We mixed the dough according to the package, and added about 10 drops of red food coloring to make the cookies pink! Each of the older children (age 4 1/2) got a cookie cutter and they did a really good job cutting out their hearts as I rolled pieces of dough for them. I found some red sugar in a decorating kit from Christmas, and some coarse white sugar - mixed together and sprinkled on top. Voila! Nearly instant valentines cookies! And they were good too - it was a Trader Joe's mix and I would highly recommend it. They didn't last 24 hours.
