Mexican Pizza

What a simple and delicious weeknight meal this was!
It started with a pot of cooked black beans.  I've only recently starting cooking my own beans - why it took me this long I don't know. Of course I still use canned beans for convenience - but I like the idea of cutting back on the cans when possible - it's cheaper, and healthier.  But it's so easy, and to my great surprise home cooked beans really do have so much more flavor than canned beans.  I never would have thought that - but they do.  I simply cook the dry beans in water until they are almost done, and then add a little salt at the end - and so much flavor. 
Anyway - the pizza.  A flour tortilla toasted in the oven until crisp.  Spread with refried beans, sprinkled with black beans, smeared with a little tomato salsa, topped with cheese and back in the oven until the cheese is melted.  Then topped with diced tomato, lettuce, avocado, salsa, sour cream and a squeeze of lime.  That's it.  simple and yummy.
