Broccolli & Cauliflower Loaf

Sounds gross, doesn't it?

Well it wasn't!

As you may have noticed - I'm a big fan of all kinds of veggie patties.  I've made broccoli patties a few times and I just love them.  I finely chop a bunch of broccoli in my food processor, mix with bread crumbs and egg and seasoning, shape into patties and fry. 

But the other day I was feeling lazy.  I had some broccoli and cauliflower that I needed and wanted to use, but I really didn't feel like standing over the stove to cook a couple dozen patties.  So I made the mixture same as I would for patties - finely chopped veggies in the food processor (broccoli, cauliflower, onion, a little celery), a bunch of fresh bread crumbs*, a few eggs, and some seasoning.  I mixed this together well and then just packed the whole bunch of it into a greased loaf pan.  I cooked this in about a 375 oven (the oven was set at 400, but I'm pretty sure my oven runs cool) for probably 90 minutes, until it was brown and looked well set.  Then I let it cool a little and sliced - really yummy!

* about the bread crumbs - I have been making all our bread and I don't want to waste any of it!  So I save the ends of the bread in a zipper bag in the freezer.  When the bag is full I dump it all into my food processor and process it into crumbs.  Then I store those crumbs in freezer bags.  I don't think I'll ever buy bread crumbs again.
