Cheesy Broccoli Quinoa Casserole

Here is a great recipe that I tried last week.  I have always been a big fan of that classic old cheesy broccoli casserole, and I love quinoa, so when I saw this I knew I needed to try it.

I had intended to follow the recipe - but when I got part way through gathering up the ingredients I realized I only had about half the quinoa I needed.  So I did this with half quinoa and half cooked brown rice.  And I probably used more broccoli than she calls for.  I used chicken thighs that I poached in some salted water and then diced.  Otherwise, I followed it pretty closely.  The only other thing I did was I made extra of the sauce - I figured if I was going to the trouble to make a home made cheese sauce, I might as well make extra.  So I doubled+ that portion, and used the extra to make some homemade macaroni & cheese (which my ungrateful little kids didn't think was nearly as good as the stuff in the box!).
