Fried Quinoa

I'm fully and officially obsessed with quinoa.  I think I like it better than rice - and I really like rice.  This is basically a fried rice type recipe, but with quinoa instead.  I would call this more of a Thai style, because it's seasoned with a bit of fish sauce and lime juice. 
Fried rice is something that I always just make up as I go along, so I don't have much of a recipe for you, but here's a basic idea of how I do it:
I use a fairly hot wok.  Put in some oil - I like peanut oil for this, with a little sesame oil for flavor.  Add in cold cooked quinoa or rice, garlic and ginger.  Let that cook for a minute, then add in veggies - whatever diced veggies you like.  For this one I used zucchini, celery, carrot and onion.  Then add your protein.  This one had scrambled egg, and some leftover grilled salmon from the night before.  Season with soy sauce, fish sauce, lime juice and a little rice wine or sherry.  A perfect meal.
