School Lunch Day 80: English Muffin Pizzas (again!)

This is an easy school lunch that you can make in about a minute if you done a little bit of advance prep.

Yes, you've seen these before. English Muffin Pizzas. They are so easy to make. Just get some english muffins - I try to buy whole wheat, but they're great on any kind you like. Spread on a little tomato sauce, top with a bit of cheese (and other toppings if you like), and pop in the oven - 400 degrees for about 12 minutes is just right in my oven.

When I make these I make a couple of tray of them. It's fast and easy to make a whole bunch. If you bake them on a sheet of parchment paper on the cookie sheet, then you can just pop the whole sheet in the freezer after it cools. The next day, when they are good and frozen, peel them off and toss them in a ziploc bag. Then you can just grab them out a couple at a time for super easy lunch packing. 

I pack them while still frozen. This works perfectly if you are packing the night before. If you want to pack these in the morning, then I might pop them in the microwave for 30 seconds or so, just to give them a little head start with defrosting so they aren't still frozen at lunch time. 

I know not everyone loves cold pizza, but it's practically a food group in our family, so my kids just eat these for lunch at room temperature. On the side they've got some cut up veggies and sliced apples.

If you had your pizzas made ahead, and you prepped fruit and veggies ahead of time for the week, I think you could literally throw this lunch together in about a minute.
