Tuna melts for kids

I love to make tuna melts, but my kids don't do well with sandwiches that come apart easily.  It just turns into a mess, and mealtime at our house is messy enough without me adding to it.
So I figured this trick out a while ago and it works great.... Instead of putting on the tuna and then a slice of cheese, I mix grated cheese into the tuna.   I grill them on my panini maker and press down a bit to get the sandwich really squished together.  When the cheese melts it holds the whole thing together.  This way even the littlest ones can manage a sandwich without it falling apart. 
I like to make very simple tuna - just mayo and a little Old Bay Seasoning.  I don't mind other things in it, but I like to really taste the tuna.  And I love to use Trader Joe's organic mayo when I have it - it's the best.  The bread shown here is Dave's Killer Bread 21 Whole Grains - organic, whole grain, lots of fiber and protein, and really delicious.
