My easy fall back when I've done nothing about dinner ahead of time - it's 7:30 by the time we get all the kids to bed, I'm tired and hungry. The answer: Eggs! A few other fresh things from the fridge and we have a really good meal.
Tonight's dinner: omelets. Three eggs, shredded cheese, a little diced bacon (Trader Joe's all natural pre-cooked bacon - brilliant!), avocado, tomato, salt and pepper. Jim's also had a bit of diced ham, because he likes more meat in a meal.
Satisfying, fresh, and super fast.
