Carne Asada Salad

Salad again tonight - I'm on a roll.

This time, more of a Mexican inspired salad, with a slightly spicy dressing, avocado, and topped with sliced Carne Asada.

The Salad:

  • mixed greens
  • shredded carrots
  • zucchini - sliced thin with the vegetable peeler
  • green onions
  • tomatoes
  • avocado

I love zucchini in salad.  And I especially love avocado in salad.

The dressing:

  • plain yogurt
  • sour cream
  • lemon juice
  • lime juice
  • a bunch of seasoning: garlic, onion, oregano, paprikah, cayenne, cumin, salt pepper - basically everything you'd find in taco seasoning. 

I considered using taco seasoning actually, but decided it would be too heavy on spice and I had all the spices I needed anyway.  I have no idea what the quantities were of the spices - a couple tablespoons of yogurt and sour cream, two limes and one lemon, and then I just started adding spices until I liked the taste.  A lot of cumin, just a little cayenne, and everything else in between. 

I tossed most of the dressing with the salad, but saved a little to drizzle over the top of the meat.  The meat was a sliced and marinated carne asada from Trader Joes (I take shortcuts), I just cooked it under the broiler, let it rest for a minute and sliced.  I crumble up a few tortilla chips in the salad for crunch, and add a few on the side.
