Theme of the month - soup and veggies. So this is a simple veggie soup that is super healthy and very satisfying. And very easy.
This is a pot full of white-ish veggies - a whole head of cauliflower, one big parsnip, about 5 medium size turnips, a head of broccoli and one onion - all roughly chopped. Cover with broth and simmer until soft. And then puree. Season with a little salt and pepper. That's it really. The soup is great as-is, simple and creamy and flavorful. I've made a similar soup before with just the broccoli and cauliflower, but this time I had the parsnip and turnips and I thought I'd give them a try. I liked the addition.
For the kids I doctored it up a bit - because my kids don't need to be on a diet. I added a bunch of cheese and some cream and let that all melt together until it became more of a cheesy veggie soup. With some more shredded cheese sprinkled on top - it was really, really (I mean really) good. I totally could have eaten a huge bowl of this version - but that would have been beside the point.
For us - a little healthier treatment. I had cottage cheese and a little shredded cheddar on mine. Jim had some diced chicken, cheese and sour cream on his. Crumbled bacon would have been really good - but it's January, you know.
