Chile Blanco

Another meal made from the same batch of beans mentioned in my previous post.  I made one big pot of beans, used it for three meals, and put a bunch in the freezer. 
This one: white beans, diced green chiles, oregano, onion, garlic, mushrooms and chicken broth.  I diced the onion and cooked in a little olive oil until soft, and then added that to the beans and other ingredients.  The mushrooms were really finely chopped - not a traditional chile ingredient, but I thought if I diced them small enough then the kids probably wouldn't notice (and they didn't).  I just simmered it all together for an hour.  Then it was served with shredded cheese, crumbled tortilla chips, sour cream and diced tomatoes.  And for the the grown-ups I added some shredded cabbage and a little salsa verde, and I added some diced chicken to Jims.
Super easy, super yummy.
