Roasted Eggplant Spread

OMG - this was soo good!  Way better than I even thought it would be.  And so easy!
 
Roasted eggplant - I cubed it roughly, tossed with olive oil and salt, and put it in the oven until soft and a little browned.  Then mashed it all up with a fork, stirred in some crushed garlic, olive oil, lemon juice and parmesan cheese.  That's it.  Spread it on warm toast bites.  I ate way too much.
