Quinoa & chard salad

Well this was good.  I threw this together for a party last night, and had the leftovers for dinner tonight, and I really liked it.  I needed to bring a dish, I didn't want to go to the store, and so I wanted to come up with something to use what I had in the house - quinoa, chard, fennel.
Tri-color quinoa cooked in salted water, chopped raw red chard, finely chopped fennel and onions, cubes of salami.  The dressing was lemon juice, olive oil, dijon, garlic, salt & pepper.  And I added some grated manchego cheese.  Yummy.
