Here was another experiment that turned out really good! I love my mom's potato pancakes that she makes after thanksgiving - basically leftover mashed potatoes, some egg & flour, and fried in butter. That's what I had in mind when I made these, but I had some other root veggies that needed to be used. I've had other root veggie mash/purees in place of mashed potatoes as a side dish before, and I've loved them. So I thought I'd try making some patties in my mom's style, but using a root veggie mash instead of mashed potatoes - they were super flavorful and definitely something I'll do again!
