School Lunch Day 102: Mini Pancake Muffins!
Another easy packed school lunch - today it's breakfast for lunch with mini pancake muffins!

These are the best - and so easy! If you are making pancakes, just mix up extra batter and make muffins out of it. I like to add a little extra sweetness to my pancake batter so that the pancakes and muffins taste great without any syrup on top - I often add about 1/4 cup of maple syrup, but today I used brown sugar. Then just fill your greased (or paper lined) mini muffin pan with pancake batter, and dress them up however you like - add a raspberry, or a couple of frozen blueberries. Sometimes I just sprinkle a little cinnamon sugar on top, and sometimes I just leave them plain.
I make my pancakes from scratch. It's really so easy. But you should be able to do this with a good storebought pancake mix too.
They make a great lunch item, and a quick and easy way to pack lunch. Today they have the mini muffins with a yogurt tube, with berries and cheerios on the side. With the muffins already made, it took less than 5 minutes to make these 4 lunches, and most of that time was spent cutting strawberries.
