School Lunch Day 49 - flatbread quesadillas
Did I mention that we just got back from vacation? There wasn't a whole lot of fresh food in the house, so I had to dig around a little. Fortunately I did have a few things in the fridge that have a long shelf life, so I was able to pull together what I think ended up looking like a pretty good lunch!
Cheese always saves the day for me, and I had some uncooked chapati from Costco that were still sealed in the package, so they were great. If you haven't bought those, you totally should. They are in the fresh food section - near the cheese. Uncooked Roti-Chapati - they are whole wheat flatbreads that you cook on a hot pan. Much like tortillas, but a little thicker, and they are great for quesadillas. I also made a few quick cheese crisps. I found a few apples in the fridge. Cabbage and celery were the only veggies in my fridge that were still good. My kids actually like eating raw purple cabbage - I told them once that it was the magic kind, and they associate cabbage with "cabbage patch" - so they call purple cabbage "magic patch". Whatever, as long as they eat it. We haven't had a whole lot of veggies the last few weeks, so I need to ease them back into it.
School Lunch Day 44 - chocolate chip pancakes
Breakfast for lunch! This is the last lunch I'm packing for two weeks! We're heading out on vacation later in the week, and I'm going to let the kids buy school lunch on the last day so that I don't have to deal with washing lunch boxes and putting stuff away right before we leave town. So what better for our last school lunch of November, but chocolate chip pancakes?
School Lunch Day 43 - burritos to-go for a field trip
I think burritos make a perfect field trip lunch. They are self contained and easy to eat with one hand. And even when eaten cold I still think they are warming and comforting for the tummy - which is just what we needed on this stormy day. For field trips I try to pack stuff that is easy to eat and not messy, and travels well.
School Lunch Day 42: Pizza rolls (again!)
So my lunch plan for this week is: make it easy and take shortcuts wherever I can. Fortunately I had some pizza rolls in the freezer still - the last of them, so I will make more when we get home. I don't buy a lot of pre-packaged snack thingys, but I do like them for airplane rides. Target had a bunch of stuff on sale - buy three get one free - so I while I was getting airplane snacks I also picked up a little extra to get me through the week with some easy lunch options.
School Lunch Day 41: Pizza Grilled Cheese Sandwiches
Friday sandwiches + Friday pizza all in one! I've been wanting to make this for a while, and a rainy Friday seemed like the perfect time. I did not make this lunch ahead, I just made it this morning. I'm not sure how well it would keep overnight with the pizza sauce on this very soft bread. Maybe on a thicker bread I think it would do fine, but this very soft whole wheat bread was all I had and I didn't want to take my chances. But they were easy to make and came together really fast, so making these in the morning was really no big deal.
School Lunch Day 40: French Toast Sticks with Maple Yogurt
Breakfast for lunch is a day late, because I made lunch ahead of time, and then forgot that they didn't have school on Wednesday, so I saved it for Thursday. Breakfast for lunch is an easy one to pack ahead, because most breakfast foods keep really well in the fridge. This stuff was all going to be in the fridge either way, whether it was in a lunch container or some other kind of container, so I might as well pack it for lunch.
School Lunch Day 38: Leftovers (noodles + pizza)
Monday is leftovers day! Sometimes that means that the kids get all the same, and sometimes they get a little different. It's a great opportunity to clean out the fridge and use up the little bits of stuff that aren't enough for a dinner.
